This twist on the classic crepe will be a perfect, quick addition to your Christmas brunch! The best part is that half of it is prepared the day before!
Pumpkin Pie Filling:
½ cup brown sugar
½ cup white sugar
½ tsp salt
1 tsp ginger
1/3 tsp cloves (you can add 1 ¼ tsp of pumpkin spice as a substitute for ginger and cloves)
2 tsp cinnamon
2 cups pumpkin
¾ cup milk
Preheat the oven to 350 degrees F. Mix together the brown sugar, the white sugar, the salt and the eggs. Add the ginger and cloves (or the pumpkin spice) and the cinnamon. Add the pumpkin and mix well. Add the milk. Mix well. Pour into six to eight ramekins. Bake for 50 minutes. Once they are done baking, remove from the oven and set on a cooking rack, covering with a clean towel until morning.
The next day, prepare the following crepe recipe:
1 cup flour
½ cup milk
½ cup water
½ tsp salt
Mix together the eggs, milk, water and salt. Add the flour and beat to a smooth batter. Heat a frying or crepe pan on medium heat. Once it is headed, pour a generous amount of batter into the center of the pan. Using a circular motion, pick up the pan and turn the batter into a wide circle that fills as much of the pan as possible. This will ensure the crepes are thin.
Let it sit for one minutes and once the edges of the crepe start coming up, flip the crepe. Layer the crepes on a plate or serve immediately. Spoon three tablespoons of the ramekin pumpkin pie filling into the crepe. Fold the top over and hold with a dollop of whipped cream, fruit and more!
Top your pumpkin crepes with baked pumpkin seeds, cinnamon, powdered sugar, and even whipped cream! Enjoy this delicious breakfast any time of year by freezing some of the pumpkin pie filling after its baked!
Alternative: You can divide the pumpkin pie filling into two frozen pie shells or 24 tart shells. Bake at 350 degrees F for one hour. The pie may crack on the top when it is close to being done.
