Saskatchewan is great at growing rhubarb. Try this delicious punch recipe for all your extra stalks.
4 cups finely chopped rhubarb
6 cups boiling water
3 Tbsp Lemon Juice
3/4 cup Orange Juice
1 cup sugar
1 cup water
Measure the rhubarb into a large bowl. Pour the boiling water over top. Cover. Let stand overnight. Strain through cheesecloth into pitcher. There should be 7 to 8 cups of juice. Add orange juice and lemon juice.
Combine sugar and second amount of water in saucepan. Bring to a boil. Add to rhubarb juice. Stir. Taste for sweetness, adding a bit more sugar if needed. Chill to serve. Recipe makes approximately 9 to 10 cups of punch.
