Living Sky Winery and Cypress Hills Winery are two choices for excellent fruit wine.
I have a bottle of summer in my hands. It’s pale pink, like the sky at dawn, and smells of berries and sunshine. Poured into a glass, it hints of long days and fragrant nights. With one sip, I am reminded of a picnic under the apple blossoms, the bees buzzing from flower to flower over my head.
What is this magical elixir? Can we really bottle summer?
Saskatchewan’s new fruit wineries are doing just that, taking Saskatchewan fruit at the peak of perfection and turning it into delicious table wines, dessert wines and hard ciders that capture the luscious goodness and flavour of a prairie summer.
“We have such great fruit here in Saskatchewan. It’s a huge part of our success,” says Sue Echlin, proprietor of Living Sky Winery, which produces wines with sour cherries, raspberries, strawberries, black currents, and rhubarb (it makes a food-friendly table wine).
