Saskatchewan Red Rhubarb Square
1 cup butter
2/3 cup icing sugar
2 cups flour
2 cups brown sugar
4 cups chopped rhubarb (may add more if you like)
Combine flour and icing sugar in a bowl. Cut in butter using a food processor or pastry blender. Press into parchment-lined 9x13 baking pan. Bake for 15 minutes at 350°F or until golden.
Beat eggs, mix in brown sugar and rhubarb. Pour over base and bake for 30 minutes at 350°F in a conventional oven, or 300°F if using a convection oven, until set.
Goes well with a scoop of ice cream or dollop of whipping cream.
